The best way to start your week as a Biz-mom, is to go easy & healthy, and even your kids will love to help.
So, for this week we have the perfect lunch ideas and some tips that might be very helpful for your busy schedule.
Quinoa Coconut & Choco balls
- 240g of raw cashews
- 140g of shredded coconut
- 240g of medjool dates (pits removed)
- 15g of maple syrup
- 140g of cooked, cooled quinoa
- 1 vanilla bean
- 1/4 tsp of turmeric
- 10ml of water (optional)
- 20g of coconut flakes (dry)
- 50g of dark chocolate, melted (70%)
Soak the dates in water and in a separate bowl soak the cashews.
Mix in a food processor until well combined.
Then start with the balls and freeze them for 30 minutes.
Melt the chocolate and add a little choco on top of the balls with a little coconut flakes.
-To cook the quinoa use 1 cup of quinoa & 2 cups of water.
-Cook the quinoa in advance and let it cool. You can safe some in the fridge for salads, breakfast,desserts or soups and it will last up to 2 weeks.
-Melt the chocolate in the microwave stirring every 10 seconds, do not over heat. Be careful not to burn it.
-Buy dark chocolate (it’s healthier) and you can increase the maple syrup depending on your sweet tooth.
– Let your kids help you with the mix and rolling out the balls, they will enjoy making them and they will enjoy even more eating them.
